Chocolate Ice Cream Cake Recipe

I have a quick recipe for you for the weekend. Someone in this family had a birthday this week and here is the cake I made:

Ice Cream Cake

You will need:
1 family-sized brownie mix
1/2 gallon of ice cream in flavor of choice
toppings of choice

1. Make the brownie mix according to the directions except place it in a bigger pan. I believe mine is 15 x 11. Bake according to package directions, except it may not take quite as long.

 2. Chop up the toppings you chose. I chose Snickers and Oreos. Yum!

3. Add softened ice cream to the mixer and blend. Spoon over brownies and freeze at least two hours.
4. Enjoy!
I would show a picture of the birthday boy blowing out his candles, but he occasionally reads this blog! I should note that I used both low-fat brownies and low-fat ice cream and the fat was missed by no one.

  2. Oh I never thought to do it with brownies - Mom always used crushed up chocolate cookies pressed in a springform pan - then 2 layers of ice cream (birthday kid could pick 2 flavors) and another layer of cookies in between - frosted with whipped topping. This looks easier - and yummy!!!
